Working from home requires a unique set of time management skills. And part of that time management is making time to cook a balanced meal for your family.
The following easy weeknight dinner recipes for busy moms are my go-to’s for cooking my family dinner. I feel good feeding these dinner recipes to my family and they enjoy eating them.
These meals also tend to be lower fat, lower-carb dinner recipes which is great for families trying to make healthier choices. I usually serve these main dish meals with a simple salad tossed in our favorite salad dressing and two side dishes including:
- A Bag of Microwaveable Broccoli
- Steamed Green Beans
- Roasted Zucchini
- Yellow Squash Simmered with Onions
- Baked Sweet Potatoes
- Corn on the Cob
- Mashed Cauliflower
- Brown Rice
- Tortellini Tossed with Butter and Parm
Easy Weeknight Dinner Ideas for Busy Moms
1. Chicken Cacciatore
I make this Chicken Cacciatore dinner from Skinny Taste A LOT. I buy pre-sliced mushroom and usually slice a couple of peppers and onions during lunch or the night before so they are ready to be tossed in the pan. I also use at least two peppers of different colors to sneak in extra veggies.
2. Chicken Nuggets
What family doesn’t like chicken nuggets?! Kayln’s Kitchen Low-Carb Chicken Nuggets with Almond Meal is my family’s favorite make at home version. When chicken tenderloin is on sale at our grocery store I make a chicken parmesan out of them and also make and freeze a batch of nuggets for another night.
3. Lemon Chicken
I discovered this easy and super yummy One Skillet Chicken with Lemon Garlic Cream Sauce from Little Spice Jar when a friend shared lemons from her lemon tree with us. I was a little hesitant at first because of the cream but I always have some on my fridge for coffee so I figured I’d give it a try. It was so good! And it’s still a yummy dinner without the cream. I pound the chicken ahead of time to save a step at dinner time or buy chicken cutlets when they are on special.
4. Pesto Chicken
My preschooler kept eating the leaves off my kitchen window basil plant so I tried out another recipe from Kayln’s Kitchen Easy Baked Pesto Chicken. This easy weeknight dinner idea was an unexpected hit! I almost always make tortellini as a side dish with this recipe.
5. Stuffed Cabbage Casserole
If it’s not obvious, I’m a fan of SkinnyTaste and Kayln’s Kitchen. I’ve been making both of their recipes for a lot of years. If you have made any of their recipes before its probably no surprise that a regular meal in our home is SkinnyTaste’s Kayln’s Stuffed Cabbage Casserole. I make this with ground beef or ground turkey and white or brown rice. Sometimes with chopped tomatoes and sometimes with crushed tomatoes. Whatever we have in the pantry. And it always comes out great!
6. Roast Chicken
Thomas Keller’s My Favorite Roast Chicken is one of the simplest recipes that should be in every family’s dinner rotation. I don’t bother trussing the chicken I just “rain” the salt as directed, add pepper and it on pop it in the oven. Any leftovers are perfect for lunches the next day.

7. Chocolate Chip Banana Muffins
Never let bananas go to waste again! A favorite treat in our house is quick to make Alida’s Kitchen’s Banana Buttermilk Muffins. First, there is no need for buttermilk – we’ve used buttermilk, low-fat buttermilk, 2% milk and 1% milk and the muffins have always come out great. I try to use an additional third banana and use a combination of both white and whole wheat flour. We also use more chocolate chips than the recipe which makes these muffins perfect for a dessert treat!
